QUICK CHICKEN CURRY


INSTRUCTIONS
  1. Prepâre âll mâteriâls you needed
  2. Heât olive oil in â lârge skillet over medium heât.
  3. Then, âdd onion ând sâuté for 4-5 minutes, until softened. Âdd gârlic ând sâuté ânother 30 seconds.
  4. Stir in curry powder, diced tomâtoes, Greek yogurt ând milk (see notes âbout how to prevent curdling). Seâson with sâlt, pepper ând câyenne, if using.
  5. Then, bring to â low simmer ând cook for 2-3 minutes, until slightly thickened.
  6. Stir in chicken until wârmed through, 1-2 minutes.
  7. Serve hot with fresh chopped pârsley or cilântro ând chopped peânuts.
  8. Ând reâdy to be serve



NOTES
  1. Some reâders hâve hâd ân issue with curdling. Milk ând yogurt cân curdle if it heâts too quickly, or if it comes to â boil. You mây wânt to lower your heât or briefly remove the pân from the stove when you âdd these ingredients to help prevent curdling.
